15 Healthy Toddler Snacks

These are 15 of my (current) favorite toddler snacks. Enjoy!

    • Tuna Fish mixed with Mayo on Crackers or Pretzel Thins. Top with Sliced Tomato.1743531_989310179257_850872109_n
    • Homemade Fries (peel and slice 3 potatoes. Put into large plastic baggie and add about a tablespoon of olive oil. Shake until well covered and then place on a foil covered baking sheet. Add garlic powder and salt to taste. Cook at 350 degrees for about 40 min or until browned.)
    • Cauliflower or Zucchini Bites. Douse veggie of your choice in Mayo, cover in Bread Crumbs and roast in oven at 400 degrees until they are brown and you can easily stick a fork through. I made Cauliflower Bites a few nights ago and boy were they yummy!


  • Dried Vegetable Chips (we buy these at Brookshire‚Äôs. They can also be found at Sprouts and Wholefoods). My 20 month old LOVES these.

  • Homemade Blueberry Oatmeal Muffins are a healthy but yummy treat! Preheat oven to 400 degrees. Ingredients: 1 C Quick-Cooking Oats, 1 1/4 C Whole Wheat Flour, 1/2 C Turbinado, 1 tsp Baking Powder, 1/2 tsp Baking Soda, 1/2 tsp Cinnamon, 1/4 tsp Salt, 1 egg, 1/2 C Milk, 1/3 C Vegetable Oil, 1 C Fresh Blueberries. Directions: Mix dry and wet ingredients separately and combine. Fill Muffin tins 3/4 full and bake 22 to 25 minutes or until browned.
  • Dried Fruit i.e. Raisins, Mango, Kiwi, Cranberries or Plums (great when child is constipated).
  • Cheddar Ducks (an organic alternative to Goldfish. We buy ours at Brookshires).


  • Hummus and Pita Chips. Nom nom nom! Mama likes this one too. ūüėČ

  • Ants on a Log (peanut butter and raisins on a piece of celery)

  • Frozen PB and Banana Bites (Peanut Butter sandwiched between thin slices of Banana and placed in freezer).
  • Whole Grain Cereal. These two Kashi cereals are perfect for Toddlers…
  • Kidney (or any other kind of) Beans mixed with melted Cheddar Cheese.
  • DIY Yogurt Bites: Spoon small portions of Yogurt (we use Stonyfield’s Yo Baby) onto a baking sheet and freeze. They don’t necessarily look appetizing but little man likes them anyway.

  • Try putting pieces of Fruit and/or Veggies on skewers…instantly becomes more appealing.
  • Honey Cinnamon Roasted Chickpeas (Mix a 15 ounce can of chickpeas, 1 TBSP Honey, ¬Ĺ TBSP Olive Oil, ¬Ĺ Tsp¬†Cinnamon and 1/8 tsp salt together and bake in oven at 375 degrees for 45 min.).¬†

Monster Mommy!

Two months ago Owen started sleeping through the night. It was bliss. Each morning I could hardly believe that I felt so rested. I thought it was too good to be true. It was! Lol. For at least three weeks now, on average, Owen has been waking up about 6 times a night.

Now, before Bailey and I were married, I always told him that I did not function well on less than 8 hours of sleep. He didn’t believe me–told me it was in my head–until we got married and had kids. Now he will be the first to tell you that if I don’t get my sleep…well…let’s just say Monster Mommy is not a fun person to be around! Unfortunately she has been rearing her ugly head quite a bit lately but due to a good nights sleep (gave Owen rice cereal before bed), time with the Lord, and a thermos of the best and prettiest caffeinated tea EVER, Monster Mommy has crawled back into her cave for now. AND she may just hang out there for a while. Why? Because the Lord has been pursuing my heart and has been using Bailey, Church, and many others to remind me that Jesus is a lot more powerful than sleep deprivation and can give me the strength to thrive as a Wife and Mother regardless of my physical circumstances.

I took some pictures of my tea this morning and am excited to share them! In case you didn’t know, tea can actually be visually striking. It doesn’t always come in bags. You can buy loose leaf tea which is often tastier and can be quite beautiful. Thanks Mom Treherne for my Rose Petal Black Tea…

Sickness + More Toddler Meals

Boy has it been a rough week! Adam caught Strep for the THIRD time in 3 months and then passed it to Owen who also tested positive for RSV. They both got a Bicillon antibiotic shot to treat the Strep which made them feel better almost immediately. Owen’s RSV test was a very light positive so the nurse told me that he was either at the end of the virus or the beginning. Since his nose was runny a couple of weeks ago and he is not runny or congested at all now I am assuming he was at the end of it and they both seem back to normal. Now I’m just trying to muster up the motivation to finish wiping everything with Lysol.

Here are some more pics of meals I’ve been feeding Adam. He may have been sick but his appetite was still in full swing!


Brisket, Carrots, Green Beans, Pineapple, Grapes, Strawberries, and Blueberries. He ate every last bit!


Salmon/Mayo/Tomatoes on Pretzel Thins, Pineapple, grapes, Blackberries, Blueberries, and Strawberries. He ate everything but half a Pretzel Thin.


Toast with Strawberry Jam, Snap Peas, Mandarin Oranges, and Mango Yogurt. He ate over half of the toast, all of the Yogurt and Mandarin Oranges and almost all of the Snap Peas.


No Sugar Added Applesauce Pancakes, one Scrambled Egg, One Banana. He ate everything plus another half an egg and another pancake. The pancakes were not my favorite ever but Adam sure liked them. You can check out the recipe HERE if you are interested.

Valentine’s Day

Valentine’s Day is one of my favorite holidays! Even when I was single and spent the day alone I still enjoyed participating in the festivities. Probably because I enjoy making things out of paper and what better things to make than cute little Valentines??? I happen to like pink and red hearts and of course GLITTER! Here are some pics of a few Valentine’s I made this year. The first one is the Valentine we gave to Adam’s Doctor. She said it was the only one they had received all day! ūüôā


I like making Valentine’s but I like my boys way more!! I have cherished spending the day with Bailey, Adam, and Owen! Unfortunately we spent part of it at the doctor’s office (Adam has Strep again!) but as you can tell by this picture, he didn’t mind too much (the sucker definitely didn’t hurt)!

So adorable!! I wish I had a picture of Owen from today but his Valentine’s outfit is temporarily unavailable due to a massive blowout! Ugh!

Bailey and I were going to go on our first “kid free” date ¬†since Owen was born but because Adam has Strep and has been wheezing/needing breathing treatments we decided to stay home. We still made a romantic night of it though. We rigged Bailey’s kindle to function as a mini tv and then put Adam’s Mickey Mouse Sofa in front of it and let him watch some episodes of Mickey Mouse while we watched a movie called About Time. Great movie and great night!

Right now Bailey is at work (he works nights) and both of my boys are asleep. I need to get to bed as well but it is so nice and refreshing to take a few minutes to unwind and process through the day. These times of solitude are a gift from the Lord. My prayer tonight is that all four of us would have an overflowing love for the Lord and for his commandments, and that we would love each other and those around us as Christ has loved us. Here are some verses on the subject of love starting with my favorite passage!

What then shall we say to these things?¬†If God is for us, who can be¬†against us? He who did not spare his own Son but¬†gave him up for us all, how will he not also with him graciously give us all things? Who shall bring any charge against God’s elect?¬†It is God who justifies. Left Alone

A few days ago I went shopping at an outlet mall with my sweet Mother in Law. We had a great time and got some cute stuff for the boys. After we were done, Mom headed home and I decided that I would feed Owen in the (parked) car before doing the same. About 30 seconds after I started nursing Owen, I noticed that a car pulled up in the spot next to me. I didn’t really think anything of it but did notice that the driver got out and walked towards the mall. About 6 minutes later I was done feeding Owen, made a few calls, and got out to buckle him back into his car seat. As I shut his door I noticed movement coming from the car next to me. It startled me because I had thought it was empty. It was not empty. There were three kids (a baby, a 2-3 year old, and a 5-6 year old) sitting ALONE in the backseat. Just to be sure my eyes weren’t playing tricks on me I looked in the front seat again and sure enough–empty. By that time it had been about 10 minutes since the adult had left the vehicle. It was dark out and very cold (in the low 30s). After I was certain they were young kids and were alone in the car I called out to a lady who happened to be walking by and told her the situation. She peeked in the windows and gasped. We both agreed the kids were way too young to be left alone. Another lady walked by and asked what was going on. She was downright angry. At this point it had been about 15 minutes since the adult had left the kids. I was going to call the police but the third lady said there was as security guard at the other end of the mall so I drove over to where he was and told him of the situation. I offered him a ride (it was pretty far) but he said he would walk. Well, he walked incredibly slow and finally showed up just as the children’s Mother or Babysitter arrived. She looked very young so I am guessing babysitter. At this point she had been gone from her kids for 20 minutes and by that time a small crowd had gathered around the car. One of the ladies confronted the girl as she opened her car door. She said, “M’am you left your kids out here all alone in the car, in the cold for 20 minutes! That’s not okay!” but all she said was a haughty “Sorry!” and got in and turned on the car. She couldn’t drive off, however, because the lady had moved to stand in front of her and said she wasn’t moving until the guard took down her license plate number. I don’t know what happened beyond that point. I had to drive off because my car was blocking another vehicle from getting through. I could have driven back around but both boys started hollering and crying so I decided to head home. I hope that they got her license plate number and that the police were informed of what happened because her behavior was very negligent.

This was Adam’s breakfast this morning. Ham and Egg pie, Cheese Whole Grain Toast, and Strawberries. As you can see he couldn’t wait till I was done taking the picture to snag some strawberries! Mr. Alligator wanted some too. ūüôā



Rockin Out in the Kitchen

Though Adam and I are definitely getting a bit stir crazy (due to the snow/ice storm that has been going on the past couple of days), today was a great day! We had lots of cuddles, read a ton of books, built lego towers and had so much fun making music in the kitchen. I played the piano at Victory Church on Wednesday and consequently my keyboard has been sitting out on the table. For quite a while Adam played on his mini piano while I played on mine and then after a bit I let him play on the real thing. We danced around the kitchen and had so much fun that even Owie was cooing and smiling. I wish that Bailey could have been there but he was/is at work. Pray for his safety as he drives home tomorrow morning! Here are some pics of the boys…

As you can see, Owen is sitting in Adam’s old high chair. Oddly enough he really seems to like this. He also likes snuggling in my Moby wrap. My wrap has made life easier and harder. Easier because Owen is content in it yet my hands are free to play with Adam/do housework and harder because it has started to cause my back to ache. I am looking into buying a woven wrap because, unlike my Moby wrap, it does not stretch which means the weight will be more evenly distributed.¬†Here’s a picture of me carrying Owen earlier today. I look crazy but he looked so cute I had to share.

We are still trying to eat healthy! Here are a couple pictures of meals Adam has eaten. The first one is Peanut Butter French toast, Kiwi, and Yogurt. The second one is Chicken Spaghetti, grapes, orange bell pepper, and breaded zucchini.

Marathon Update and Eating Healthy

Boy am I bad at keeping up with this thing! I guess once again I’ll write a marathon update on life.

Thankfully, the progesterone shots that I had to take every week did their job and Owen was born full term and in great health. My pregnancy was pretty rough those last two months or so (partial bed rest/complications) but it was all worth it! Here’s a couple pics of Owen as a newborn…

The first two weeks were a bit rough and I had to go to the ER but despite my health, because of the many meals brought to us, help from family and friends, and by the grace of God we were able to quickly adjust to life with two boys. It definitely helps that Owen sleeps “like a baby” in the naive sense of the phrase. I get about 8 hours almost every night! Such a blessing.

The first time Adam saw Owen he said (with a frown) “What’s that???” But he has quickly grown to love his brother and enjoys playing with him. His favorite thing to do is wake up “Owie” from his nap! Definitely my favorite thing too. :-/ Here are some pics of them together. As you can see, I get a kick out of putting them in matching outfits! Lol.


A couple of months before Owen arrived we moved into our first house. We opted out of having ¬†one built (they took too long and went up on the price) and bought a beautiful home in Kaufman. We absolutely love it here and I have enjoyed decorating the rooms. Here are a few pics of our house…

When Owen was two months old we went on his first road trip! We drove to Alabama for Christmas to visit with Bailey’s family. It was a lot of fun! Afterwards we drove to Tennessee to visit with my sister and her family! Adam loved playing with his cousins and Bailey and I had such a good time visiting with Ken and Sabrina! ¬†Here are some pics from our vacation…

Now that all of that is out of the way and I got these ADORABLE pictures out of my system I can write about what I got on here to write about! LOL.

For the past few weeks Adam has been very moody and more tired than usual. I did some research on what I could do to give him more energy and maybe improve on his attitude. What stood out to me was to make sure he gets enough sleep, drinks plenty of liquid, gets exercise and eats a healthy rounded diet. We have been doing pretty good on the sleep, erxercise and drinking but his diet has been lacking. Adam traditionally has been a very picky eater but I decided to try changing his diet anyway. I bought a ton of whole foods and for the past week I have been feeding him very healthy meals and not only has he scarfed them down but his attitude has definitely improved. He is so much happier and so am I!

Some of the things He’s had: Eggplant pizza, breaded cauliflower, green bean fries, dried mango, dried mixed veggies, organic cheddar ducks (healthy alternative to goldfish), zucchini, homemade “Kool-Aid” (tea mixed with Apple Cider Vinegar), kidney beans, cherry tomatoes, whole wheat blueberry and raspberry oatmeal muffins, etc. Here’s a picture of what he ate for breakfast this morning: Scrambled Eggs, Strawberries mixed with Organic Yogurt, and Ezekiel Organic Sprouted Bread topped with cheese. It’s simple but yummy and healthy. I think I’ll start posting pictures of his meals to give me motivation and maybe it will inspire other Mom’s to make healthy meals too! ūüôā
